Let me tell you a bit about myself.


I was born in Turin, I’m 36 years old, and I’ve had a passion burning strong since I was 16: a passion for the art of baking.

For me, baking isn’t just a job—it’s a true calling.

Ever since I was a child in the heart of Turin, I learned how to transform flour, water, and yeast into little works of art—like my breadsticks, which have become one of my specialties!

My journey didn’t stop in the city of the Mole: in 2013, I won the award for Best Pizza al Taglio in Turin, given by La Stampa.

Not satisfied, I dove into the world of pastry as well, specializing in organic, vegan, and gluten-free products.

I had the honor of learning from a world-renowned icon, Master Piergiorgio Giorilli, who inspired and motivated me to pursue my career as a baker.

My adventure also took me to Geneva, where I lived for six months, but the pull of Italy was too strong. I returned to pursue a lifelong dream: to open my first bakery in Pianiga, Veneto.

Since April 2024, I’ve had the honor of being a member of Ambassadeurs du Pain, a prestigious international association of bakers dedicated to defending and promoting artisanal bread. This has been one of the most meaningful milestones I’ve been chasing since the beginning.

Our vision for our artisan bakery is to carry on the tradition of fresh, high-quality bread at a time when the food industry is moving in the opposite direction. We carefully select top-quality ingredients, pour love into every detail, and constantly seek innovation to offer products that are a true celebration of flavor. Every piece is unique and different from the next.

I consider myself a determined, innovative, and resourceful artist who shares his passion for food made by skilled hands. I embody the resilience of someone who wakes up every night driven by the desire to bring our products to Italian families' tables—families who are excited by the Respectus Panis method we’ve developed. It’s a revolution in baking that I now practice and passionately promote.

We’re very active on social media, where everyone knows me as “Capoooo”. Our pages are followed by people of all ages, and many customers tell us how much joy our videos bring them.
